Sablés are French round shortbread cookies. Sablé means "sandy" in France because the dough resembles that of breadcrumbs or sand once the butter is worked into the dry ingredients. These are kicked up a notch with rich coffee undertones and a pop of chocolate sweetness with its miniature chocolate chips.
